Brewing advice for the Kalita Wave 155:
Coffee grounds: 15 g
Water temperature: 96 °C
1st pour: 30 ml – 30 seconds
2nd pour: 150 ml – 10 seconds
3rd pour: 50 ml – 80 seconds

Tip: Use water with around 70 ppm. Grind slightly coarser for a faster brew. Pour in circular motions for even extraction. Let the beans degas for about 8 days after the roast date.

Huehuetenango is one of Guatemala’s three non-volcanic yet highest and driest coffee-growing regions. Warm air currents from Mexico meet cool winds from the Cuchumatanes Mountains, creating a unique microclimate that allows coffee cultivation up to 2,000 meters. Due to its remote location, most farmers process their own beans – helped by the many rivers and streams in the area. These exceptional conditions contribute to the vibrant acidity and fruity character of Huehuetenango coffees.
