Aroma: A highly penetrating and intense fragrance, reminiscent of its prior state as Fino. Notes of dried fruits and hazelnut dominate the aroma.
Taste: Dry, precisely balanced in acidity, with ample body and an exceptionally elegant character on the palate. Incredibly expressive and lingering in the finish.

Don Zoilo Amontillado is crafted from Palomino grapes sourced from the Añina and Carrascal vineyards. It undergoes a biological aging process in the Solera system for several years, followed by an additional oxidative aging process spanning several years as well. This Amontillado is dry, featuring an intense aroma of dried fruits and hazelnut. It pairs wonderfully as an aperitif with fine cheese or Serrano ham, or can be enjoyed on its own as an after-dinner drink.
