Don Zoilo Oloroso is produced from Palomino grapes sourced from the Añina and Carrascal vineyards and undergoes 15 years of oxidative aging in the Solera system. It is dry, smooth, and robust in taste, featuring delicate nutty undertones. In Spain, it traditionally pairs well as an aperitif with aged cheese. However, it also complements red meats, game, hearty stews, or wild mushroom dishes. Ideally enjoyed on its own as an after-dinner drink.
